In season 5, episode 6, Rick plots on transforming into a turkey to get a presidential pardon. This leads to President Curtis having a military team (and then himself) transformed into turkeys. They later turn back into humans, along with Rick and Morty:

Just Beyond: Welcome to Beast Island (Monster and Muscle Growth Transformation)

Welcome to Beast Island is the third entry in the graphic novel series Just Beyond, written by R.L. Stine and illustrated by Kelly & Nichole Matthews. The premise: "Karla and her little brother Benny accompany their Uncle Bill on a scientific expedition to study unidentified species on the remote island." Benny gets bitten by one of the island's weird critters and slowly turning into one...

Note: Beast Island is over 110 pages--the scans below represent 5% of the book. 

Later on they encounter a crab/turtle monster, and Benny's new form becomes useful in battle:

Noodle Commercials (Muscle Growth and Gorilla Transformations)

Here are two Japanese commercials from the Nissin company involving ramen and transformation. The first is for Chicken Ramen, which can make poultry buff:

Reptil (Dinosaur Transformation)

Reptil is a C-list Marvel character who can change any part of his body into that of a dinosaur. Most of his transformations are instant and partial and therefore uninteresting, but in Reptil #2 he turns all the way into a Tyrannosaurus Rex:

Thanks to Cole for recommending these scenes from episodes 3 and 4 of the anime Suppose a Kid from the Last Dungeon Boonies Moved to a Starter Town? (たとえばラストダンジョン前の村の少年が序盤の街で暮らすような物語). Soldier Merthophan gets turned into a locust hybrid by a demon-possessed king.

In the episode "Sick Day" (first half of episode 4) "Ollie fakes sick to skip school, and contracts a monster sickness that goes too far." I've edited together all the TF bits. Too bad there wasn't any muzzle growth...

"Forever Young" and "Kamen Rider Wizard" (Age Progression and Muscle Growth)

Thanks to Ian Ricky for editing and providing these clips. The first is from the Hong Kong film Forever Young (返老還童, 1989). While vacationing in Thailand tour, four pals drink a potion that turns them into kids. One of them drinks an antidote that reverts his upper half to adulthood but doesn't work on his legs.

The first 10 seconds are from the earlier regression, the remainder is progression.

Our second clip is a brief muscle growth scene from Kamen Rider Wizard episode 20, featuring Shunya Shiraishi. The main character is given two power rings, one of them called "Excite Please." His body explodes out of his clothes as a result:

In episode 35 Zamza transforms into an "Ultimate Superior Being." In episode 37 he is defeated and reverts back to his Darkling form, now severely burnt and near death:
