In episode 25 has Nube's demon hand starts to act up; its seal breaks, causing his arm to completely transform:

This manga/anime is "set on a fictional medieval island where humans are plagued by Yoma, humanoid shape-shifters that feed on humans." The Yoma are hunted, for the protection of humans, by "Claymores," human-Yoma hybrids.
In chapter one the protagonist Raki asks his brother about Yoma and Claymores:
Later on, Raki comes home to find that a Yoma has taken over his brother and killed their family:

In the first episode a trio of survivors from the cat-transformation epidemic are chased by a clowder; one of them gets caught and transforms into a cat. We only see a hand transform but hope the series will show more:

Doraemon has continually cranked out episodes since 1979, so some stories from the manga have been adapted over and over again. For example, "The Wolf Family," has been adapted five times! The latest version aired in January. For the earlier ones, and some transformations involving other species, see our Doraemon megapost from several a years back (all its links have been fixed).
Back to the 2025 version! It's from episode 844 of the current season. Doraemon (the blue cat with magical gadgets) points a flashlight at Nobita (his human friend) and the "Moonbeam Torchlight" transforms Nobita into a wolf, so he interact with a wolf family nearby. Toward the end Nobita reverts to human form at the worst possible time. Both scenes are in this clip:
My thanks to trinhxuanduc for recommending this scene from the Korean anime. Episode 114 (or season 5, no. 17) shows a character being possessed by a demon and turning into what can only be described as a soccer monster.
